New York Cheese Cake

Cream Cheese                30 lb.

Granulated Sugar          7½ lb.

Mix sugar and cheese to incorporate

 

Shell Eggs                       5½ (room temp)

Add eggs in 7-8 parts, scrape down often to avoid lumps in cheese cake

 

Heavy Cream                 1 pt.

Vanilla                            1 oz.

Lemons                           2 lemons

(Use grade lemons for rind)

Add rind and liquid slow while mixer is on low gear until incorporated

 

Scale Weights

8”                             3 lb.

9”                             4 lb.

10”                           5 lb.

 

Use 30 or 40 qt. mixer paddle

Bake temp:            350

Bake time:             1½-2 hours
