Snail Danish

Step 1: Roll out a 1/3 piece Danish

Step 2: Roll it 17″-21″ wide and 1/4″-3/8″ thick

Step 3: Wash the dough lightly with water and sprinkle dough with cinnamon sugar (see photo 10)

Step 4: Now fold dough over (width)

Step 5: Cut the folded dough to 4 oz pieces using a scale(see photo 13)

Step 6: After the dough is cut, give each piece a twist (NOTE: Left hand roll up; right hand roll down on the bench)

Step 7: Stretch the twisted dough a bit and form your snail; starting from the center of the piece and going around the twist loosely

Step 8: Finally, press down on the snail and tuck the end of the twist underneath (see photo 16)
